VEGAN MISO RAMEN

We were having some friends over who are vegan. My sister and I decided that this would be a great route to go. I am so happy this is what we came up with! It had the nice consistency that a good miso soup has, but with added ingredients. I got two thumbs up from both vegan friends and non vegan friends as well! Be ready for more vegan recipes in the future.




If you are looking for a satisfying bowl of ramen, look no further! This one met all the needs and wants we had. You can add whatever garnishes and toppings you want! I will list all the ones we used below. Get fun and creative with it! This fed 6 people.


VEGAN MISO RAMEN


Ingredients:




Ramen base:

3 quarts of Ocean's Halo no beef broth

3- 11 ounce packs of fresh ramen noodles (I went to H-Mart)

6 Tablespoons of white miso

3/4-1 cup of water

1 teaspoon of togarashi

4 teaspoons of umami seasoning with mushroom and onion

3 Tablespoons of dry wakame (not pictured)


Garnish we used:

bok choy

mung bean sprouts

soft tofu

brown beech mushrooms

fresh ginger

teriyaki nori

soy sauce

crispy fried shallots

Fly By Jing Zhong sauce

black and white sesame seeds


Method of Preparation:


  1. Put the broth and the miso paste in to a pot and bring up to a simmer. Let it simmer for some time to develop flavor. Whisk until it combines. It will separate in the pot, it is totally normal! Just whisk it again.

  2. Add in the dry seasonings.

  3. While this simmers, put a pot of water on the stove to cook the bok choy and noodles.

  4. Cook the bok choy first. Cook it for about 2 minutes and immediately place it into an ice bath.

  5. Once you removed the bok choy, cook the noodles according to the packaging.

  6. Strain the noodles and place them into bowls.

  7. Add your toppings and garnishes.

  8. Gently pour hot broth over the top to warm the garnish and toppings.

  9. Enjoy!!


Serving and plating suggestions:

Using the Fly By Jing Zhong sauce on top as garnish was a great finishing touch! It gave it some heat and a bunch of flavor. It does pack a bit of punch. Always remember you can always add more, but you cannot take it back out. Feel free to get creative with this! Post you version of it in the forum!
